We mash fresh chiles with sea salt and let them ferment for three months in glass, then rest the mash in charred oak barrels. Only after that do we blend, adjust, and bottle — by taste, never by a recipe card. That is why it is bright and funky and smoky all at once, instead of just hot. If a batch tastes flat, it goes back in the barrel.
